Sedona, Az — If your idea of comfort food involves warm, fluffy rice packed with spice and soul, you’re not alone. Mexican rice, also called arroz rojo, is beloved around the globe for its savory flavor and satisfying texture. But what turns basic rice into an irresistible, restaurant-quality side? Whether you’re cooking at home or prepping for a Southwest-inspired dinner party, these seven hacks will take your Mexican rice from good to unforgettable.

    1. Choose the right type of rice

Start with the foundation: your grain. Traditional Mexican rice uses long-grain white rice, known for its fluffiness and ability to hold shape without becoming sticky. Avoid short-grain rice, which tends to clump. Jasmine rice can work in a pinch, but it adds a floral aroma that may compete with bold Mexican spices. For the most authentic taste and texture, go with classic long-grain or even basmati if you’re after a slightly nutty flavor. Consistency in grain size helps your rice cook evenly, giving it that perfectly tender bite.

    2. Toast your rice first

This one hack alone can completely transform your dish. Before you add any liquid, toss your dry rice in a little oil (or butter for a richer finish) and toast it until it turns golden brown. This step enhances the rice’s nuttiness and builds a deeper, more complex flavor base. It’s a classic technique used in countless Mexican households and restaurants. This toasting step mimics what you’d find in restaurant-quality Mexican rice, adding that signature toasty, savory depth.

    3. Invest in a good rice cooker

If your rice usually turns out mushy or uneven, your pot might be to blame. A reliable rice cooker can be your secret kitchen weapon. Chrizelle Diaz of WeKnowRice recommends affordable yet effective models from Aroma, perfect for beginners and budget-conscious cooks. These cookers automate temperature and timing, letting you focus on your seasonings and sides. In Sedona’s drier climate, a rice cooker also helps maintain optimal moisture levels, preventing that dreaded undercooked center or soggy edges.

    4. Swap water for chicken broth

Flavor your rice from the inside out by cooking it in chicken broth instead of plain water. This swap infuses the grains with umami-rich depth and elevates the dish from side to star. Homemade broth is best, but store-bought low-sodium versions work well too. You can even go with veggie broth for a plant-based version. This broth swap mirrors how Mexican chefs enrich their rice, creating complexity without overpowering the balance of tomato and spices.

    5. Add the right spices for that signature flavor

Authentic Mexican rice doesn’t rely solely on salt and pepper. You’ll need garlic, onion, cumin, and tomato paste (or sauce) to create the signature red hue and layered flavor. Many cooks also include a dash of chili powder or paprika for extra warmth. Let the spices bloom in oil before adding the rice and broth to extract their full flavor. This extra step ensures your seasoning penetrates the dish and doesn’t just sit on top. If you’re feeling bold and experimental, add a pinch of cinnamon; it’s a secret ingredient in some central Mexican recipes.

    6. Experiment with veggies for texture and color

Vegetables can turn your rice into a meal on its own. In Sedona’s health-conscious food scene, it’s common to see Mexican rice loaded with hearty, colorful additions like carrots, peas, black beans, corn, and even diced potatoes. As our food writer Tommy Acosta notes, his love for Cuban-style rice with beans proves that legumes add not only nutrition but also a rich, earthy texture. These ingredients also bring visual flair; think rainbow rice that’s as good on the eyes as it is on the fork.

    7. Level up with toppings like eggs, plantains, and meat

The beauty of Mexican rice is in how customizable it is. Traditional comida corrida meals often include arroz a la Mexicana, which is topped with a fried egg or sweet plantains as noted by Food & Wine. In Sedona’s fusion-friendly food culture, it’s not uncommon to see shredded carne asada, grilled chicken, or even roasted mushrooms as topping choices. Whether you’re aiming for hearty or healthy, the toppings make your rice a versatile centerpiece. Don’t be afraid to play. Top your rice with crumbled queso fresco or a spoonful of salsa for that final flavor pop.

Perfecting your Mexican rice doesn’t require a culinary degree — just a few smart tweaks and a bit of practice. With these seven hacks, you can make a batch so good, even your pets will try to sneak a bite.
