    Chef Kyle Rhodes Blends Global Influences with Peak Verde Valley Ingredients in a Bold Seasonal Refresh

    SEDONA, Ariz. (March 25, 2026) – Set against Sedona’s iconic red rock landscape, Forty1 — the signature restaurant at Ambiente, North America’s first landscape hotel and Arizona’s only Two MICHELIN Key property — is ushering in spring with a dynamic new seasonal menu that reflects both the rhythms of the Verde Valley and a globally inspired culinary perspective.

    Led by Executive Chef Kyle Rhodes, the refreshed menu showcases a thoughtful fusion of Asian, French, Caribbean, Mediterranean and Southwestern influences. Rooted in the restaurant’s commitment to exceptional quality, the menu highlights locally sourced produce, premium meats and dock-to-doorstep seafood, with an emphasis on in-house preparation and whole-ingredient utilization to minimize waste.

    This spring, guests can expect bright, expressive dishes built around peak seasonal ingredients such as fava beans, peas, beets, mushrooms and leeks, all thoughtfully composed to reflect both the landscape and the season.

    “Spring in the Verde Valley is incredibly inspiring; the ingredients are vibrant, fresh and full of life,” said Chef Rhodes. “With this menu, we wanted to celebrate that energy while weaving in global influences that complement the natural flavors of the region. Every dish is designed to feel balanced, intentional and connected to place.”

    New dinner highlights include the Seared Diver Scallops with roasted trumpet and beech mushrooms, peas and gnocchi, Jerk-Spiced Chicken Breast with coconut basmati fried rice and charred pineapple relish and Coco-Braised Pork Belly with mole verde, fava beans and toasted pepita chili crunch. Additional standouts include Seared Marinated Lamb Loin with chorizo and fagioli di controne heirloom bean ragout, Pan Seared Duck with smoked farro and braised beets and a rich Leek and Fungi Risotto finished with mascarpone, parmesan and beurre noisette crumble. Guests can also enjoy the Soy Glazed Market Fish served with coconut red curry shellfish sauce and bok choy, as well as the Copper State Prime Beef Tartare featuring ancho oil, Hatch green chili, bourbon sabayon and seeded sourdough toast.

    The lunch menu introduces equally fresh, flavor-forward offerings such as the Sonoran Chicken Gyro with Hatch chile-marinated chicken and cilantro-lime yogurt, Crab Tostada with yuzu aioli and passionfruit gel, Carne Asada with Fried Smashed Potatoes paired with avocado salsa verde and an Ahi Bánh Mì featuring gochujang aioli and pickled vegetables.
