    Firecreek Coffee Company Founder Set to Open Big Park Bakery this Summer

    Coffee Industry Expert Expands into Artisan Bread Industry

    Sedona News – Mike Funk, founder of Firecreek Coffee Company with three locations throughout Northern Arizona and two in the Phoenix area, has spent nearly 30 years in the coffee industry. Now, the coffee connoisseur is moving into the artisan bread industry with the announcement of his latest venture — Big Park Bakery.

    Opening in June in the Village of Oak Creek at 6446 State Route179, Big Park Bakery will offer fresh baked breads, including naturally leavened sourdough as well as an array of scratch made pastries and savory items, too.

    Big Park Bakery“Big Park Bakery will be a traditional European bread bakery in the heart of Big Park,” said Funk who has been busy restoring old stone-decked ovens and old bread-making equipment for the bakery’s opening. “We’re excited to offer this style of bread to our customers as well as to our Firecreek Coffee locations.”

    To ingratiate himself into the world of artisan European breadmaking, Funk consulted an expert known “the bread whisperer” who came out from Connecticut to teach Funk and his team how to make this traditional style of bread, which is comprised of just flour, water and salt. In addition to the scratch-baked goods made at each Firecreek Coffee location, Big Park Bakery will supply the restaurants with fancier, more elevated pastries and fresh-made breads.

    The Sedona City Council through a majority consensus voted 5–1 at its Wednesday, August 13, special meeting, to temporarily shelve a controversial auto license-reading surveillance program, with council members  Melissa Dunn, Kathy Kinsella  Brian Fultz,  Derek J. Pfaf and Pete Furman giving a thumbs down,  and Sedona Mayor Scott Jablow supporting the cameras.
