    Executive Chef David Moraga has brought a fresh passion for authentic Italian cuisine to both restaurants, and every plate reflects his commitment to quality, tradition, and flavor.     I recently sampled three of Chef Moraga’s signature creations, and each one transported me to a different corner of Italy.

    Let’s talk about his Flat Iron Steak.

    Perfectly charbroiled and cooked to a flawless medium-rare, it arrived tender, juicy, and bursting with flavor. Every bite was beautifully seasoned, rich without being heavy, and cooked exactly the way a great steak should be. Served with fingerling potatoes and asparagus, it’s the kind of entrée that reminds you why simple ingredients, prepared with skill, are often the most memorable.

    Then there is the Lasagna Bolognese.
