The Asylum in a haunted hotel… you’d have to be
crazy not to eat there… it’s cozy, classy, yummy
gourmet fun.
Before dinner we chose to experience an
international sampling of wine and cheese (4 of
each).
My wine tasting assortment included: 2006
Montinore Muller-Thurgau (slightly sweet, fruity,
crisp and delicate Oregon white), 2007 Zolo
Torrontes (smooth, fresh and flowery Andean white),
2005 Chateau Gravelle-Lacoste (dry, full, brisk and
grassy, French Bordeaux white) and 2004 Capolan
Merlot (smooth, rich and fruity with woody
overtones, California red). These were paired with
cheeses: Welsh Red Dragon (full, strong, creamy,
sharp and malty with crunchy mustard seediness),
French Brie (creamy, buttery, and silky with hints
of mushroom), American Magtag Blue (moist, crumbly,
lemony and heady) and French Port Solute (semi-soft,
creamy, smooth and tangy) and Lavosh bread. A lovely
culinary jaunt… deeelightfulllll!
Dinner began with Roasted Butternut Squash Soup…
sweet, creamy, spicy and savory with a slight after
burn. Very nice. I’ve included the recipe below for
your tasting enjoyment. Then came Roast Maple Leaf
Duck Breast with organic short grain brown rice,
fruit salsa and an assortment of veggies… tender,
slightly gamey, sweet, chewy, crunchy and delicately
spiced with a hint of heat. A low groaning noise of
pleasure begins bubbling, then lots of yumming and
ummms. For desert a cappuccino with Bailey’s Irish
Cream… yes! The meal was an extraordinary sensual
experience… beauteous, redolent, and hedonistic.
Lunch prices $5.00 to $14.50, Dinner prices $18.00
to $29.00. I wholeheartedly recommend the Roasted
Maple Leaf Duck Breast… outstanding!
Open daily, hours: Lunch 11am –3pm, Dinner 5pm –
9pm.
Recipe… a wonderful soup from the Asylum
Roasted Butternut Squash Soup Recipe
By Richard D. Pasich Executive Chef – Partner at The
Asylum Restaurant
Servings: 6 Preparation Ingredients
2 large whole butternut squash -- roasted
1 each white onion -- chopped
2 each poblano peppers or green chili equivalent --
roasted, peeled
6 ounces Oak Creek Amber beer or similar
2 cups vegetable stock
1/2 cup brown sugar
1 tablespoon garlic -- minced
1 pinch cinnamon
1 pinch nutmeg
1 Serrano chili -- minced fine
1 cup heavy cream
salt and pepper to taste
Cut the squash in half and remove the seeds.
Place in shallow roasting pans with water and roast
at 400º until very tender, approx. 45 minutes or
more. Remove from oven and cool. Roast, peel and
de-seed poblano chilies. Preheat skillet until
scorching hot. Sauté onions and chilies, then de
glaze with beer. Add vegetable stock, peeled squash,
and remaining ingredients except for the cream.
Simmer together for 30 minutes then puree. Remove
from heat and slowly fold in the heavy cream.
Serve garnished with cinnamon lime crema and minced

A Great Find… a coffee house with classIf
you are looking for a nice place to spend a lazy
afternoon chatting with friends, enjoying a great
cup of coffee, light lunch or desert, there is a new
place in Sedona… a little European café called
Zelo Cosi. They offer a variety of coffees and
other beverages, deserts, and light meals like
Panini sandwiches and soup of the day. They also
have live entertainment on the weekends and free
